“Silver Thread is located on the eastern shore of Seneca Lake, in the heart of New York's Finger Lakes region. In the late 1980s the vineyard shifted to the practices of sustainable farming, seeking to work in harmony with the natural ecosystem. They use mulch, compost and cover crops instead of chemical fertilizers, to provide their vines with a healthy, living soil. This strengthens the link between the wine and its terroir, the special character of its site. They use no herbicides or synthetic pesticides, only naturally occurring sprays including elemental sulfur, seaweed extract, fish emulsion, and a tea made on the farm from the horsetail plant. The vines are intensively managed, pruned and harvested by hand. Similarly, Silver Thread wines are minimally processed in a low-tech, traditional cellar. The turtle image on the label was carved in a rock beside one of New York's woodland creeks by a Native American artist many centuries ago. As an earth symbol to the Iroquois people, the turtle reminds us to care for the land and water that give us the gift of wine."

Domaine Dupeuble
We don’t know that much about Domaine Depeuble except that they produce some of our favorite wines from Beaujolais and are organic! Dupeuble is known from making consistently good Beaujolais no matter what the vintage.
Their vineyards in Argentina were developed on virgin soil, so from the outset it was easy to implement chemical-free winemaking. In France, it was a much more difficult task. Luckily for us, they have succeeded. At long last, an affordable organic wine with consistent quality!

To make a wine of character, grapes must have distinctive flavor. All that we do or do not do in the vineyard is motivated by this consideration. This method of culture is clearly not consistent with producing high yields, but we have the satisfaction of harvesting healthy, balanced grapes, intrinsically capable of producing a wine of great quality. It is for this reason that we do not use chemical fertilisers, preferring a compost made on the property from a mixture of sheep manure and the previous year’s pressings (marc) which, once mixed into the soil, maintains its humus content and microbiological equilibrium.
Just as treatments are reduced to a minimum, the natural nutrients in the soil improve the physiology of the plant and its natural resistance to disease. These conditions, which we want and try to obtain, enable us to avoid escalating chemical treatments, intended to destroy this or that parasite but which, with the resulting biological imbalance, engender the upsurge of other parasites.
